Kitchen prep basics

* clean all working surfaces
* prepare utensils and containers needed
* pre-heat pots/pans if you're working with them
    * turn on the fire & place pot/pan on it
    * if necessary, quick clean with some kitchen paper and water
        do this when they are hot
    * add oil ~20sec - 1 min before you actually start to frie something
* keep aims in mind; at this stage improvisation seldom adds any value to the result
    e.g.: never "boil" vegetables in their own juice
        → fry, glase, ... check existing recipes

:
    Cut different fruits into nice pieces
    Arrange on a plate
    Add some fresh mint, dried fruits, nuts or seeds if available
    Presentation is everything!

:
    Dice all veggies in thin slices and cubes
    Presented on a plate
    With oil and lots of vinegar

    Thinly slice
        * Paprika parallel
        * Cucumber slices

    Boil ocean water
    Clean pataters
        (this can be detailed work, don't waste time with trying to safe as much patato as possible... your time is valuable too)
    Boil them ~20 min
    Serve with some mayo / ketchup / cheese / saucage / ...

    Perfect as a late night snack!


[ef!!] CARB/SIDE/DINNER/WARM/VEGAN— Boiled Rice with Onion
:
    Add 1/3 ocean water & 2/3 fresh water in a big pot to boil with the rice
    Simultaniously "peel" the layers of the onion into the water and let it boil with the rice
    Add 1/2 garlic, peper corns at the very beginning
    Let it all sit in the pot untill rice is done

    Cut chorizo with a sciccor in small pieces
        (~half a slice big?)
    Fry without adding fat in a pan
    Add cabage and garlic
    Optional: serve with raisins


[ef!!] WARM/PROTEIN/LUNCH/MEAT— Fried Chorizo with Sauerkraut

    Same as above but don't add garlic or any other spices to it
    Just have the sauerness of the kraut, straight from the jar


[!]CARB/PROTEIN/MAIN/SOUP/WARM/VEGAN/ONE-POT— Rice & Lentil Soup

Ingredients:
    2+ big onions (cut into in big pieces)
    3+ garlic (sliced in thin pieces)
    250g rice
    1 jar of lentills
    Spices (sweet paprika, cayenne, black pepper, red pepper mix, salt etc)
    Water
    __________________________
    More veg's can! (carrots, red paprika, etc)

Then:
    Fry onion in thin layer of olive oil
    Add garlic
    Add spices
    Add dry rice
    Let it soak in the onion-oil mix for some minutes, then add water (1/3 ocean water - 2/3 fresh water)
        add enough!
    Boil till ~5min before rice is ready, then switch of fire and let it rest for some 10 min (the rice will continue cooking, absorbing some more of the water)
    Add lime


[e!!] PASTA/CARB/SIDE/WARM/VEGGIE— Ocean Pasta

    Boil pasta in ocean water
    Rinse with ~1 dl fresh water


[ef!!] MAIN/PASTA/WARM/VEGGIE/ONE-POT/COMPLET— Spinach Pasta

    Caramelise 1 big onion with some hot paprika-like spices
    Cut onion in thin slizes
    Add (a lot of) garlic, either full or cut fine
    Open spinash, drain the water, add together with the cream to the onion
    Add nutmeg to the cream
        + some peper?
    Blend with pasta


[eeff!!] MAIN/LUNCH/PASTA/COLD/VEGAN/ONE-POT/COMPLET— Avocado Pasta

    Process onion in a similar way as above
    Optional: add some corn or some other veggie that might need some time on the fire
    Cut avocado
    Blend pasta with onion and add the fresh avocado too
    Optional: add a fresh tomato (cut in cubes)
    Optional: add fresh greens

    White/red cabage soup with mustard

[!]CARB/VEGAN/WARM/MAIN— Rice & Eggplant
(as made by D)

    1/3 sea water + 2/3 fresh water
    Heath pot on fire
    Wash rice
    Add rice and water to the pot, following the 1-1.5 ratio
    Bring almost to boiling point, right before decrease the fire
    Rice must not boil but "blubber"
        you can hear this
    Check the rice again, reduce fire, rice nust now be "simmering"
        you can hear this
    Then, when it starts to make the soft sound of sticking to the bottom of the pan, 
        carefully spoon it around in 1-2 twists
    Let it dry untill you get the desired "bite"

    Meanwhile pre-heat a big enough pan
    Cut the eggplant in thin long slices
    Put them separately from oneanother in the pan without oil
    Turn them when they start to burn (smoke)
    After burning them at both sides, start adding oil
    Salt (spices like garlic?)

    Basically want to dry out both dishes...
    Add oil in later stages
    Optional: add salad

(20191125  ~2320)

INGREDIENTS:
    Sunflower oil
    (Super) thin sliced red onion (big one, cut in half, then sliced)
    Thin sliced red paprika
    Spices: sweet paprika powder, smoked paprika powder, cayenne peper, black peper, salt
    (Fresh) parsli
    1/2 lemon juice
    ~500g canned tuna 
    Papas arrugadas, unpeeled, quartered on the long side

PREPARATION:
    Reduce & fry onion, adding sweet paprika powder
    When onion is fully caramelized, add papas with some ~1-2 spoons of ocean water
        (to steam papas)
    Add cayenne peper, smoked paprika powder
    After ~5-7 min, add paprika
    When papas are done ("a point"), add atun (and half of its oil), black peper, salt and probably some more of the cayenne/sweet/smoked...
    Right before serving, add lemon juice and fresh parsli 
    FIN

ADDITIONAL:
    Add couscous (possibly made with some of the oil from the fishcan)


[eeff!!] SIDE/VEGGIE/CONSERVATION— Pickled Red Cabage
(trying 20210706)

INGREDIENTS:
    1 ~medium red cabage
    Apple vinegar (~10 spoons? mybe more!)
    10 spoons (old - sauer) red wine
    Cane sugar
    1 big garlic
    Salt & peper
    5 spoons of ocean water
    Eneldo sticks, cut up in 1-2 cm pieces
    Piri piri (tiny bit)
    ________________
    Leftover veggies, like bits of onion, etc

PREPARATION:
    Cut the cabage in thin slices, wash and put in a pot
    Add the vinegar, sugar, garlic, ocean water, eneldo sticks, blend
    Add wine, peper, salt & piri piri, blend
    Add more of any of the above ingredients after tasting
    Put all in a big clean glass jar (e.g. the saurkreut ones)
    Let rest on "room temperature" for ~2h (or more, but later perhaps better stored in a fridge)

[eff!!] BREAD/CARB/SIDE— Quick Pan Breads
(first try 20220815 @IHI)

INGREDIENTS:
    200g flower
    5g baking powder
    1ts salt
    125 ml milk
    20ml oil

TOOLS:
    Non-sticking pan
    Bowl
    Strainer

PREPARATION:
    Strain flower and baking powder in bowl mix, then add salt
    Poor milk and oil
    Start kneeding gently with a bigger (plastic / wooden) spoon
    When dough sticks together like a ball, shortly continue kneeding with your hands
    Put doughball on flat surface and roll out, 1-0.5cm thick
    Cut out round shapes
    Bake them each side 5min in a non-sticking pan, covered with a lid
    ______
    Smearing little oil on each side will make it taste like pizza dough
    Experiment with different spices! (think thyme would be good)

Ingredients:
    * 4 ts Shea butter
    * 2 ts Saint Johns Wort 
    * 2 ts Bee wax
    * 40 drops Eucalyptus EO

Recipe:
    * Melt all ingredients together au bain marie
        (actually they should not touch the water)
    * Add EO
    * Blend and whip untill it gets harder
    * Poor in cleaned jars

Notes:
    * bee wax has very high melting  temperature
        so next time, I'll start with that and add other ingredients after
    * needs a bit less then 2 (big) ts I added now
        as it makes it very hard once again compact
    * needs to be poored in jars before it gets hard again, else its impossible to get it in the jars?
        esp when it has similar amounts of beewax...

Ingredients:
    * Marseille soap flakes

    * soda (fo white wash, as it bleaches)

Recipe (super easy to make -- how i did it):
    * boil 1l of water
    * add 16g soap flakes to 1/5 boiled water and stir till flakes disolve
    * add rest of water and keep on stiring a bit
    * let cool down over night
